tabil

Food histories rarely stay on the side of the border people expect.

Cultural layer

Origin
Tunisia; a ground blend of coriander seed, caraway, garlic and chili, and one of the defining seasonings of Tunisian cooking
Routes
Tunisian and broadly Maghrebi, with a history traced to Andalusian Muslims expelled from Spain who resettled in North Africa and brought their coriander with them
Context
In Tunisian Arabic tabil means coriander, and it also means the whole blend, which tells you which seed the mixture is organized around. The name is often linked to the Andalusi communities driven out of Spain by the Reconquista, who carried their cooking into North Africa. So a Tunisian spice jar carries a European expulsion inside it. Food histories rarely stay on the side of the border people expect.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
