Context
Aged smen can be decades old, passed down through families like an heirloom. It has a powerful, funky quality somewhere between rancid butter and blue cheese, but intentional, controlled, and deeply valued. A jar of old smen in a Moroccan household is both an ingredient and an archive: the fermentation carries time in it, and the household history is embedded in the taste. This is preservation as a form of memory.
