Context
Ricotta means recooked. It is what a cheesemaker gets from the liquid that would otherwise be thrown away, which makes it a thrift food that became a delicacy. European dairy law agrees and files it as a whey product rather than a cheese, which is an unusual case of a regulation preserving the humbler fact instead of upgrading it.
