Context
The argument about nduja is an argument between two European powers over who gave Calabria the sausage. The name points at France, at andouille and behind it the Latin for something stuffed. The texture points at Spain, at the sobrasada of Mallorca, in the period when the south was Aragonese. Both accounts describe a form arriving from outside. Neither is disputed on the ingredient that actually distinguishes the thing: the chilli is American, it reached Calabria on Spanish ships, and it is what turns a borrowed sausage into a Calabrian one.
