Rite

Persian calls the pistachio the smiling nut, because a ripe one splits open on its own. Couples were said to sit under the trees on a full moon and wish to hear them crack. It is folded into the sweets of Nowruz and of weddings across Iran and the Levant, where green is the colour of paradise and of spring. A nut that opens itself became a standing image for good news arriving without being forced.
