Rite

Mastic is the tears of Chios: resin bled from cut bark, hardened into drops, and the villages of the mastihochoria were built in a defensive maze because the crop was worth raiding. Under Ottoman rule the harvest was a sultan's monopoly and theft was punished by death. It flavours Greek and Turkish sweets and Orthodox chrism. A tree's wound was guarded like a mint.
