The eastern Mediterranean and West Asia; the kernel inside the pit of the St Lucie cherry, ground to a powder that tastes between almond and cherry

Used across Levantine, Armenian, Greek and Turkish baking; almost absent from Western baking, which reaches for almond extract to do a nearby job
Context
Mahlab is the part of the cherry that gets thrown away everywhere else. Crack the pit, take the kernel, grind it, and a fruit's discard becomes the smell of Easter bread and ka'ak. Whole baking traditions are organized around it, and Western baking has no word for the flavor because it never learned to open the stone. Some ingredients are missing from a cuisine because of what that cuisine decided was waste.
