Rite
Halloumi is folded, not cut, and the fold is a signature: shepherds made it in the field, mint laid between the layers to preserve it, and the shape records the hand that made it. In Cyprus it is the cheese of Easter and of the village, and it has become one of the few things both Greek and Turkish Cypriots claim without argument about the name. A food that survives without refrigeration became a shared possession on a divided island.
