The Mediterranean; the unopened flower bud of Capparis spinosa, salted or brined, picked by hand from a shrub that grows out of walls and rock
Routes
Harvested across the Mediterranean, with Pantelleria and the Aeolian islands the most prized; picking is done bud by bud in early morning, which keeps it labour-intensive
Context
Capers grow out of cliff faces and old walls, in ground nobody could farm, and every bud is picked by hand before it opens. It is the kind of crop that only exists where labour was cheap and land was poor. The islands that supply the best ones are small, dry and depopulating. The flavour is sharp enough that a spoonful changes a dish, which is the return on all that stooping.
