Context
Grains of selim went to Europe as a stand-in and was dropped the moment the real thing got cheap. That is the whole history of a spice being judged against another spice. In Ghana and Nigeria it was never a substitute for anything: the pod goes whole into pepper soup and into the drinks given to women after childbirth, which places it in medicine as much as seasoning. A pantry only calls something a substitute when it is not the pantry the thing came from.
