achar

A pickle is a good record of forced migration, because it is the thing people make first when they arrive somewhere with unfamiliar fruit.

Cultural layer

Origin
The Indian subcontinent; fruit and vegetables preserved in salt, oil and spice, sun-cured in jars, with distinct traditions in every region and most households
Routes
Carried by indentured South Asian labourers to Fiji, Trinidad, Guyana, Mauritius and South Africa, where achar became atchar and its own local thing
Context
Achar is made in summer, on a roof, in a jar that is turned daily and belongs to a specific woman who will tell you her mother's proportions. Indenture carried it across the Indian Ocean and the Atlantic, and it became atchar in Durban and kuchela in Trinidad. A pickle is a good record of forced migration, because it is the thing people make first when they arrive somewhere with unfamiliar fruit.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
