Context

A Mediterranean stone pine takes about three years to ripen a cone and the nuts must be extracted by hand, which is why they cost what they do and why cheaper Asian species replaced them through most of the supply. Pine mouth is traced almost entirely to one of them, Pinus armandii, the Chinese white pine: a bitter metallic taste that starts a day or two after eating and lasts two to four weeks. The detail that matters is what armandii was for. It is a timber tree, not a food crop, and it entered the world's food supply because it was cheap. The substitution is invisible on the label and detectable on the tongue for a month.
