A Ligurian coastal preparation formalised in the nineteenth century; now a global industrial sauce, usually made with cashew or sunflower seed rather than pine nut
Context
Pesto means pounded, and the name is an instruction: the mortar bruises the basil and releases oil, while a blade blade oxidises it and turns it dark. The jarred version substitutes cheaper nuts and stabilises the colour. It is a perfectly good sauce and it is not the thing the word describes. The method was the recipe.
