Context
Palm sugar is a daily climb. Someone goes up the tree morning and evening to collect sap that ferments if it waits, which is labour cane plantations replaced with rows and machinery, and the difference is why one sugar built an Atlantic slave economy and the other stayed regional. Gula melaka is smoky, mineral and specific to its palm. Refined white sugar is engineered to taste like nowhere.
