Context
Farro is not one grain but three, and the one central Italy kept is emmer, among the first plants humans ever farmed. It survived there because the land was too marginal to be worth converting to modern wheat. Poverty preserved it. It sells now on the strength of the word ancient, at a price the farmers who kept it going through the lean century never saw.
