black mustard

Mechanisation selects for what machines can pick, and cuisines quietly adjust around the loss.

Cultural layer

Origin
South Asia and the eastern Mediterranean; Brassica nigra, the small dark seed that pops when it hits hot oil
Routes
Central to South Indian tempering and to Bengali cooking; largely replaced in industrial agriculture by brown mustard, which does not shatter when harvested by machine
Context
Black mustard is being farmed out of existence by harvest machinery. Its pods shatter when ripe, which is efficient for a plant and useless for a combine, so commercial growing has shifted to brown mustard that holds its seed. The tempering it is used for depends on the seed popping. Mechanisation selects for what machines can pick, and cuisines quietly adjust around the loss.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
