What the world calls wasabi is almost never wasabi: over 95% of 'wasabi' served outside Japan is dyed horseradish, a substitute that shares the pungency but not the flavor. Real Wasabia japonica grows in cold mountain stream beds and requires specific altitude and water temperature. Globalization did not transfer the ingredient. It transferred a simulation of the ingredient and named it the same thing. This is how culinary authenticity gets hollowed out at scale.
