Context
Shaoxing wine is a protected geographic indication product, approved 31 January 2000 under the standard GB/T 17946, and the brewing craft, 绍兴黄酒酿制技艺, entered the first batch of China's national intangible cultural heritage inventory in 2006. What is protected is the tie to the water chemistry, climate and microbial environment of Shaoxing, against a production history spanning well over two thousand years. Its use in cooking is so foundational to Chinese technique that cooking wine substitutes, often salted to dodge alcohol regulations in export markets, are considered a serious compromise by anyone who knows the original. This is not snobbery. It is the difference between a live ingredient and a simulation.
