Oyster sauce is a Cantonese accident that became an industry. Most bottles sold today lead with sugar, starch and caramel colour, with oyster extract far down the list, which means the cheap version is imitating the thing the original was. A migrant food business that turns into a global brand usually pays for the scale in exactly this way. The sauce on the shelf is named after an ingredient it barely contains.
