Context
Oca is what Andean agriculture looks like when nobody simplifies it: dozens of shapes and colors, planted in rotation, sun-cured until sour turns sweet. It barely exists outside the Andes because the export market never selected it, so it stayed diverse, local, and whole. Absence from the global shelf is not failure: it means the commodity system never got its hands on it.
