Context
Spanish chorizo is red because of a Mesoamerican plant. Before the Columbian Exchange there was no paprika in Spain, so the sausage that now reads as definitively Iberian is post-1492 and depends on a chili from the Americas. Mexico then made its own version, fresh and crumbled, which is not a copy of the Spanish one but a return trip.
