Rite
Buttermilk is what is left after churning, so it belonged to whoever did the churning, and in the American South it was the drink of Black and poor white households and the acid that made the biscuit rise. Edna Lewis wrote the Freetown year around it. A by-product that a dairy industry discards became the defining tang of a whole regional baking tradition.
