uziza

Two peppers, one still in the dish that wanted it.
spicybitterveganvegetarian

Cultural layer

Origin
West and Central Africa; Piper guineense, whose leaves and seeds are used separately, the leaf green and pungent, the seed sharper than black pepper
Routes
Traded to Europe as West African pepper before the Indian Ocean route made Piper nigrum cheap, then dropped from European kitchens and kept entirely in West African ones
Context
Uziza is a pepper Europe used and then forgot. It crossed to European tables when the Indian route was hard, and lost its place the moment black pepper became cheaper, which tells you the ranking was never about flavor. In Igbo cooking it never left: the leaf goes into pepper soup and ofe nsala at the end, where its heat stays green. Two peppers, one still in the dish that wanted it.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
