Context

Kpomo is what a food system does with the part the leather trade wants. It is cheap, filling, and it belongs to people who cook without margin, which is exactly why it keeps getting argued about: officials have proposed banning it on the grounds that it carries little protein, as though the point of a food were its nutrient table rather than the pot it makes possible. Calling a poor person's ingredient worthless is an old move. The pepper soup does not care.
